Drunken Prunes

Dried prunes rehydrated in wine, stuffed with cream cheese, pistachios and drizzled with honey.

Prep Time:  15 minutes   |    Cook Time:  25  minutes   |    Total Time:  40  minutes   |    Servings:  13 (5 prunes per serving)

Ingredients:

  • 18 ounces  Southern Grove  Prunes
  • 2 1/2 cups  Crimson Root  Dark Red Blend Wine*
  • 8 ounces  Happy Farms  Cream Cheese
  • 1 teaspoon lemon zest
  • 1/4 cup  Countryside Creamery  Heavy Whipping Cream
  • 1/4 cup plus 2 tablespoons chopped  Southern Grove  Shelled Pistachios
  • 3 tablespoons  Simply Nature  Organic Wildflower Honey

Directions:

  1. In a medium saucepan, combine prunes and wine. Bring to a boil, reduce heat and simmer for 15 minutes or until wine reduces to a syrup consistency. Remove from heat, allow to cool for 10 minutes.
  2. In a medium bowl, combine the cream cheese and lemon zest. Using a hand mixer, mix until smooth.
  3. Add the heavy cream and whip. Stir in pistachios.  
  4. With a sharp paring knife, butterfly cut each prune. Scoop 1/2 teaspoon cream cheese into each prune.  
  5. Plate and drizzle with honey.

Tip: Use your favorite wine to experiment with different flavor combinations.
