Mediterranean Layer Dip

Try this layered dip instead of the usual Mexican version for your next party.

Ingredients:

  • 2 8-ounce  Little Salad Bar  Original or Roasted Garlic Hummus
  • ½ cup diced tomato
  • ½ cup diced cucumber
  • 3 tablespoons minced red onion
  • ½ cup  Tuscan Garden  Large Pitted Ripe Black Olives, coarsely chopped
  • Stonemill  Iodized Salt, to taste
  • Stonemill  Ground Black Pepper, to taste
  • ¼ cup  Happy Farms Preferred  Feta Cheese Crumbles
  • 2-3 tablespoons  Carlini  Extra Virgin Olive Oil
  • 9 ounces  Specially Selected  Sea Salt or Parmesan, Garlic & Herb Pita Chips

Directions:

  1. Spread hummus evenly, covering the bottom of a pie plate or similar serving dish.
  2. In a medium bowl, combine tomato, cucumber, onion and olives. Season to taste with salt and pepper. Top hummus with vegetable mixture. Sprinkle with feta cheese.
  3. Drizzle generously with olive oil. Arrange pita chips around edges of plate or serve on the side.
