Ingredients:

Oatmeal Batter:

  • 1 tablespoon  Simply Nature  Flax Seeds
  • 3 tablespoons water
  • 2 cups  Millville  Old Fashioned Oats
  • 2 teaspoons  Stonemill  Pure Vanilla
  • ¼ cup  Simply Nature  Organic Original Soymilk
  • 1 medium banana, mashed
  • ¼ teaspoon  Stonemill  Iodized Salt
  • 1 teaspoon  Baker’s Corner  Baking Soda
  • ½ teaspoon  Baker’s Corner  Baking Powder
  • 1 tablespoon  Specially Selected  100% Pure Maple Syrup
  • ¼ cup  Simply Nature  Creamy Almond Butter
  • ½ teaspoon  Stonemill  Ground Cinnamon

Add-Ins:

Directions:                                  

  1. Preheat oven to 375°.
  2. In a small bowl, combine flax seeds and water; mix thoroughly. Let stand 5 minutes or until mixture reaches an "egg-like" consistency.
  3. Combine all ingredients in a blender, including flax "egg." Blend until smooth.
  4. Line a mini muffin tin with mini cupcake liners. Scoop 2 tablespoons batter into each lined muffin tin. Add desired add-ins. Bake until golden brown, about 15-20 minutes.
