Veggie Ribbons

Turn your vegetables into ribbons of "noodles" covered in an organic tomato sauce in less than 30 minutes! So many healthy vegetables for your growing kids!

Prep Time:  15 minutes   |    Cook Time:  10 minutes   |    Total Time:  25 minutes   |    Servings:  4 kid-size servings or 2 adult servings

Ingredients:

  • 25 ounces  Simply Nature  Organic Tomato Basil Pasta Sauce
  • 1 zucchini
  • 1 yellow squash
  • 1 carrot
  • 2.5 ounces Emporium Selection  Shredded Parmesan Cheese

Directions:

  1. Heat tomato sauce in a small saucepan until hot.
  2. Meanwhile, bring a large pot of water to a boil.
  3. Using a vegetable peeler, peel the zucchini, squash and carrots into long strips. Add to the boiling water and cook for 3-5 minutes or until vegetable ribbons are tender.
  4. Drain well, pat dry with a paper towel and place in a bowl.  
  5. Top with sauce and cheese.
