Persian Quinoa Salad

Ingredients:
- 2 cups cooked Simply Nature Organic Quinoa
- 1½ cups diced cucumber
- 1½ cups quartered cherry tomatoes
- ¼ cup chopped red onion
- 1 cup chopped Simply Nature Organic Baby Spinach
- 1 tablespoon minced garlic
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- ¼ cup chopped mint
- ¼ cup chopped parsley
- 2 tablespoons Carlini Extra Virgin Olive Oil
- ¼ teaspoon ground Stonemill Sea Salt Grinder, plus additional to taste
- ground Stonemill Black Peppercorn Grinder, to taste
Directions:
- In a large bowl, combine all ingredients except oil, salt and pepper. Rest at room temperature for 15 minutes.
- Stir in oil and season to taste with salt and pepper. Serve immediately.
