Summer Grilled Potatoes and Vegetables

A great side dish that can be cooked on the grill to accompany any summer BBQ or camping trip!

Prep Time:  20 minutes   |    Cook Time:  20 minutes   |    Total Time:  40 minutes   |    Servings:  8

Ingredients:

  • 3 pounds golden potatoes, quartered
  • 1 red pepper, diced
  • 2 zucchini, halved and sliced
  • 2 yellow squash, halved and sliced
  • 2 2.2-ounce packages  Chef’s Cupboard  Onion Soup Mix
  • ¾ cup  Carlini  Extra Virgin Olive Oil

Directions:                                   

  1. Preheat grill to medium-high heat.
  2. Mix all ingredients together and wrap tightly in a foil packet.
  3. Place on grill or campfire and rotate every 5 minutes for 20 minutes, or until potatoes are soft.

TIP: Be careful when opening foil; steam escaping may cause burns.
