Grilled Pear and Apple Pork Tenderloin
Prep Time: 15 minutes | Cook Time: 30 minutes (plus 5 minutes to rest) | Total Time: 45 minutes (plus 5 minutes to rest) | Servings: 10
Ingredients:
- 3 pears or peaches, cored, cut into wedges
- 3 apples, cored, cut into wedges
- 1 tablespoon Carlini Pure Olive Oil
- 2 tablespoons Baker's Corner Brown Sugar
- ½ teaspoon Stonemill Iodized Salt
- ½ teaspoon Stonemill Ground Black Pepper
- 2 Original Pork Tenderloins
Glaze:
- 2 tablespoons freshly squeezed lime juice
- ¼ cup packed cilantro
- ¼ teaspoon Stonemill Garlic Powder
- ½ teaspoon Stonemill Ground Cumin
- ¼ teaspoon Stonemill Paprika
- 2 tablespoons Baker's Corner Brown Sugar
- 2 tablespoons Countryside Creamery Unsalted Butter
- Stonemill Iodized Salt, to taste
- Stonemill Ground Black Pepper, to taste
Directions:
- Heat a grill pan over high heat.
- In a medium bowl, combine the pears or peaches, apples, olive oil, brown sugar, salt and pepper. Toss until fruit is coated. Grill until tender.
- To make the glaze: In a blender, puree 2 cups of the fruit combination. Add the glaze ingredients, process until smooth. Season to taste with salt and pepper.
- Reheat the grill pan over medium-high heat. Brush the pork loin with the glaze and grill on each side. Continue basting pork with glaze until it reaches an internal temperature of 145-150°, or to preferred doneness.
- Allow the pork to rest 5 minutes. Carve and serve with the remaining grilled fruit.
